Cardamom, sometimes cardamon or cardamum, is a spice made from the seeds of several plants in the genera Elettaria and Amomum in the family Zingiberaceae. Both genera are native to the Indian subcontinent and Indonesia.

cardamom has a complex aroma with a piney, fruity, and almost menthol-like flavor. When used too much, it can be slightly astringent.Cardamom pairs well with poultry, red meat, lentils, oranges, rice and other warm spices, like nutmeg and cinnamon.
